My daughter recently requested hamburger soup for some quick and easy meals once her baby arrives. I delivered several zip lock bags for her enjoyment. This recipe is one my mom made and now I make it for my family. John will eat it if it’s not too often- he’s not a fan of soups so I try and make a not too huge batch as he prefers to not eat it for days on end. I was excited to use homegrown bay leaves gifted from our neighbor!
1 lb. hamburger
1 chopped onion
2 cups grated carrots
1 cup grated zucchini (optional)
1 can cream of mushroom soup
2 cans canned tomatoes
1 cup water
1/4 teaspoon garlic powder
1/4 teaspoon pepper
2 teaspoons brown sugar
1 bay leaf
Sauté the hamburger and onion. Add remaining ingredients and simmer 30 minutes. Freezes well.
